Valençay
Valençay is a truncated-pyramid goat cheese from the Berry region of central France, dusted with vegetable ash that greys the rind as blue-grey moulds develop. The lactic paste starts chalky and citrus-bright under a thin rind, then creams toward the edge with age, showing flavours of lemon zest, hazelnut, and dry grass rather than heavy farmyard notes when well made. Serve young for salads and open tartines, or more mature for boards with Loire whites. AOP Valençay requires milk from the defined zone and the classic pyramid shape traditionally linked to the château town; the ash coating both protects the surface and marks the style at a glance.
