Ticklemore
Ticklemore is a British goat cheese created by Robin Congdon in Devon, formed as a flattened cylinder with a wrinkled natural white rind and a dense, slightly chalky paste that creams at the edge when mature. Flavours run citrusy and herbal with a clean goat finish, more restrained than pungent farmhouse crottins yet more structured than fresh chèvre logs. Serve in wedges on UK cheese boards, pair with English cider or dry white wine, or crumble over beetroot and watercress. It helped establish modern English goat cheese identity in the late twentieth century and remains a reference farmstead style from the South West.
