Rocamadour
Rocamadour is a very small, flat disc of soft goat cheese from the Quercy and Causses plateaus of south-west France, thinner and more delicate than many crottins. Young wheels are creamy and mild with gentle lactic tang; a few more days of ripening softens the paste further and adds a light farmyard perfume under a thin natural rind. Eat whole on bread, warm until just molten, or pair with Cahors wines and walnut bread. AOP Rocamadour (formerly Cabécou de Rocamadour in local speech) protects the tiny format and the limestone-country goat milk that gives the cheese its fine, quick-ripening character.
