Ragstone
Ragstone is an English soft-ripened goat log from Neal’s Yard Creamery and associated makers, with a bloomy white rind and a creamy paste that softens under the coat while the core can remain gently lactic. The flavour is buttery and lemon-bright with a refined goat note, designed for reliable ripening and restaurant service rather than aggressive farmyard punch. Slice into rounds for boards, bake briefly until the centre yields, or serve with honey and bitter leaves. Named for the Ragstone ridge of Kent, it became one of the defining modern British goat bûches alongside French Loire imports.
