Pouligny-Saint-Pierre
Pouligny-Saint-Pierre is a tall, slender pyramid of goat cheese from the Brenne area of the Indre, often called the Eiffel Tower of French chèvre for its pointed silhouette. Made from whole goat’s milk with lactic set and optional ash, it ripens from a moist, chalky core to a creamier edge under a natural or ash-grey rind, tasting of citrus, white pepper, and dry meadow herbs. Serve by cutting vertical wedges that show the full height of the pyramid, or age further until the paste densifies for stronger boards. AOP protection limits production to a small zone around the village of Pouligny-Saint-Pierre, keeping scale artisanal and the form unmistakable among Loire goat cheeses.
