Murcia al Vino
Murcia al Vino is a pressed goat cheese from the Murcia region of south-eastern Spain, bathed or rubbed in red wine so the rind takes on a deep violet-burgundy colour. The paste is white, elastic to semi-firm, and mild, with clean goat milk sweetness, light acidity, and a faint vinous perfume near the rind rather than heavy wine flavour throughout. Slice for boards where the purple rind provides contrast, melt young pieces in sandwiches, or serve with membrillo and almonds. DOP Queso de Murcia al Vino protects the wine-washing method and Murcian goat milk, separating it from plain Queso de Murcia without the bath.
