Majorero
Majorero is a Canary Islands goat cheese from Fuerteventura, pressed into wheels that may be rubbed with oil, paprika, or gofio and aged from tender to firm. The paste is white to ivory, elastic when young and denser when mature, with flavours of toasted nut, salt air, and clean goat milk shaped by the island’s arid pastures and Majorera goat breed. Eat sliced with papaya or local wines, grill young pieces, or grate aged wheels. DOP Majorero protects milk origin and make on Fuerteventura, making it one of Spain’s best-known island goat cheeses beyond mainland styles such as Ibores or Murcia al Vino.
