Ibores
Ibores is a pressed goat cheese from the Ibores and Villuercas hills of Extremadura in western Spain, often finished with smoked paprika that colours the rind a warm red. The paste is compact and ivory, with flavours of hazelnut, butter, and mild spice over a steady goat foundation; younger wheels are supple, older ones firmer and more piquant. Slice for tapas with crusty bread and jamón sides, or grate aged pieces into vegetable stews. DOP Queso Ibores ties production to Extremaduran goat milk and the paprika-rubbed tradition that distinguishes it from pale Catalan Garrotxa or wine-bathed Murcia.
