Humboldt Fog
Humboldt Fog is an American soft-ripened goat cheese from Cypress Grove in Humboldt County, California, famous for a horizontal vein of vegetable ash through the centre of a bloomy white wheel. The paste is dense and fudgy near the core when young, creaming toward the rind with age, and tastes of lemon, buttermilk, and clean goat milk with a mild earthy ash note. Slice so each wedge shows the ash line, serve at cool room temperature, or pair with sparkling wine and stone fruit. It became a landmark of the late-twentieth-century US farmstead goat revival and remains a reference soft goat cheese on North American boards.
