Golden Cross

Golden Cross is a British ash-coated goat cheese from Sussex, formed as a short square-sided log with a vegetable-ash exterior and a dense white lactic paste. Young pieces are bright and citrusy under the grey ash; with age the paste firms and flavours deepen toward hazelnut and dry grass while remaining cleaner than many robust farmhouse crottins. Slice across the log for boards, pair with English sparkling wine, or serve with roasted beetroot. Made by Kevin and Alison Blunt and widely championed by UK affineurs, it is a modern English answer to Loire ash-coated chèvre with a distinctive squared profile.
