Geitost-Style Goat
Geitost-style goat cheese follows the Norwegian brown-cheese tradition in which goat whey—often with cream—is slowly boiled until sugars caramelise and the mass sets into a fudge-like block. The result is tan to deep mahogany, sweet-savoury, and distinctly caramelised, with a gentle goat tang beneath butterscotch and malt notes rather than a lactic white paste. Slice paper-thin for breakfast breads, melt into sauces, or nibble with dark bread and coffee. True Norwegian geitost and gudbrandsdalsost variants differ in goat-to-cow ratios; “geitost-style” here marks the caramelised whey method applied with goat milk character as the defining flavour.
