Garrotxa
Garrotxa is a Catalan goat cheese from the volcanic Garrotxa region of northern Catalonia, typically a small grey-rinded wheel with a compact, ivory paste. The thin natural mould coat gives a forest-floor aroma while the interior stays mild, nutty, and buttery with gentle goat character rather than sharp lactic bite. Slice for boards with membrillo and Marcona almonds, grate lightly over roasted vegetables, or serve with Catalan whites. Revived by artisanal makers in the late twentieth century, Garrotxa became a flagship modern Spanish goat cheese associated with the wooded, humid hills around Olot.
