Chabichou du Poitou
Chabichou du Poitou is a small truncated cylinder of goat cheese from Poitou-Charentes, taller than a crottin and often called a “bonde” for its bung-like shape. The thin natural rind greys with age while the dense white paste stays compact, delivering sharp lactic brightness, salted butter, and a clean goat finish that intensifies as moisture leaves the curd. Eat young and moist or dried toward a firmer, more piquant stage; it stands alone on boards or with fig and walnut. AOP Chabichou du Poitou binds production to the limestone soils and goat herds of the Haut-Poitou plateau, preserving a style distinct from flat Selles-sur-Cher discs and long Touraine logs.
