Caprino stagionato is aged Italian goat cheese, drained and matured long enough to form a natural or oiled rind and a firmer, sliceable paste. Age concentrates the milk into nutty, savoury, and sometimes peppery flavours with a clearer goat edge than the fresh form; small mountain forms may dry almost to grating hardness while larger wheels stay semi-firm and aromatic. Slice for antipasti, shave over salads and pasta, or grate well-aged pieces like a mountain table cheese. Alpine and Apennine makers differ in size and rind treatment, but all aim for a keeping cheese that shows what Italian goat milk becomes after weeks or months of careful ripening.
