Azeitão Goat
Azeitão goat is a soft, thistle-rennet style cheese inspired by the famous Azeitão of the Setúbal region of Portugal, made here from goat’s milk rather than the classic ewe’s milk. The paste is lush and spoonable when ripe, with a wrinkled natural rind, bright acidity, and herbal bitterness from cardoon coagulant layered over clean goat character and a faint vegetal sweetness. Serve by cutting the top and spooning the centre, spread on country bread, or pair with Setúbal wines and quince paste. While traditional Azeitão DOP is sheep’s milk, goat versions from Portuguese and specialty makers echo the same soft, vegetal-rennet luxury with a lighter, more citrusy caprine profile.
