Taleggio
Taleggio is a soft, washed-rind cow’s-milk cheese from Lombardy and neighbouring northern Italian provinces, square-shaped with a thin pink-orange rind and a creamy, yielding paste. The aroma is pungent and meaty from surface ripening, while the flavour stays milder—tangy, fruity, and buttery—when the cheese is ripe but not over-aged. It is a classic table cheese for bread and polenta, and melts smoothly into risottos and baked dishes. PDO Taleggio is made in defined areas of Lombardy, Piedmont, and Veneto; cave or controlled-cellar washing with salt brine develops the characteristic rind.
