Sbrinz
Sbrinz is an extra-hard Swiss cow’s-milk cheese from central Switzerland, cooked and pressed into large wheels and matured for years until the paste is dry, granular, and intensely savoury with sweet, nutty depth. It is traditionally broken with a knife or chisel rather than sliced, and may also be finely grated; the rind is natural and the paste pale gold to amber. Often compared to Parmigiano-Reggiano in role, Sbrinz is a PDO alpine hard cheese used for grating, shaving, and table shards. Long minimum ageing and full-fat milk give a concentrated flavour and high keeping quality.
