Red Leicester is a hard British cow’s-milk cheese coloured orange-red with annatto, with a dense, slightly flaky or crumbly paste and a mellow, nutty, caramel-leaning flavour when well aged. Curds are pressed into large wheels or blocks; traditional cloth-bound farmhouse wheels develop a harder rind and deeper savour than young industrial blocks. It is used for table service, sandwiches, grating, and melting in toasties and sauces. The vivid colour and Leicestershire origin set it apart from pale Cheddar-style hard cheeses.
