Queso Chihuahua is a semi-soft Mexican cow’s-milk cheese from the state of Chihuahua, with a pale yellow paste, mild buttery flavour, and excellent melting properties. Texture is elastic and sliceable when cold and stringy or smooth when heated; it sits between young Cheddar-style and mozzarella-like melt in Mexican cookery. It is essential for quesadillas, chiles rellenos, enchiladas, and table snacking. Mennonite dairy communities in Chihuahua shaped much of the commercial style still sold as queso Chihuahua or queso menonita.
