Havarti
Havarti is a Danish semi-soft cow’s-milk cheese with a springy, open paste, small irregular eyes, and a buttery, slightly acidic flavour that deepens with age. It is typically washed-curd, pressed lightly, and matured under a thin rind or as rindless blocks; young Havarti is mild and creamy, while longer-aged wheels become firmer and more aromatic. It is a classic table and sandwich cheese, excellent sliced cold or melted, and is widely sold plain or flavoured with dill, caraway, or herbs. Protected traditional production is linked to Denmark, though the style is now made internationally.
