Cashel Blue is an Irish cow’s-milk blue cheese with a creamy, moist paste and well-distributed blue-green veins. Flavour is mild to medium for a blue—buttery, tangy, and gently spicy—without the aggressive salt or ammonia of some longer-aged blues, making it approachable on boards and in cooking. It is produced in County Tipperary and is a flagship modern Irish farmhouse cheese for domestic and export markets. It is served sliced or crumbled, and melts into dressings, steaks, and baked dishes.
