Boerenkaas
Boerenkaas is Dutch farmhouse cheese, traditionally made on the farm from raw cow’s milk (or other permitted milks under the name rules) and often in a Gouda-like washed-curd, pressed-wheel format. Flavour is more complex than industrial Gouda—grassy, nutty, and lactic when young, developing caramel and crystalline notes with age—because of raw milk and small-batch practice. It is eaten as a table cheese, sliced or cubed, and aged styles are shaved or grated. European traditional speciality protection sets rules for farm production and composition while allowing regional farm variation across the Netherlands.
