Buffalo Scamorza
Buffalo scamorza is pasta filata from buffalo milk shaped into gourd-like forms, briefly dried or smoked. It is firmer than fresh mozzarella, mild and sweet, with better melt integrity for cooking. Slice for sandwiches, melt on pizza, or grill until blistered. Smoked pieces add aroma to baked dishes. Serve table slices near room temperature.
