Buffalo ricotta is a whey or whey-plus-milk cheese made after buffalo mozzarella and similar pastas filata, richer and fluffier than many cow ricottas because buffalo whey retains more fat and solids. Spread on toast, fill ravioli, or sweeten for desserts. It browns well under a grill. Use within a few days; high moisture spoils quickly once opened.
