Buffalo Provolone
Buffalo provolone is stretched buffalo-milk pasta filata aged from mild and supple to sharper and firmer. Higher fat gives a silkier melt than many cow provoloni of similar age. Slice for antipasti, melt in sandwiches, or grate aged pieces over pasta. Heat gently to limit oiling-off. Mild wheels suit fruit; aged ones suit cured meat.
