Cantharellus subalbidus is the white/pale Pacific chanterelle—creamy caps, fruity aroma, excellent edible of western North America. Less famous than golds but superb. Cook as golden chanterelle; colour is paler only. Regional forager favourite. Butter brings out perfume.
