Chinese Celery

Chinese celery, often leaf or thin-stalk types, packs intense aroma into slender, hollowish ribs and abundant leaves—far more herbal and peppery than Pascal water crunch. Stalks are thin; you cook them more often than snack them raw in long sticks. Essential in many East and Southeast Asian stir-fries and clear soups. Cut short and stir-fry hot with meat or tofu; add leaves at the end so they stay bright. A little goes further than Western celery in the pan. Do not expect thick peanut-butter ribs from a Pascal breeding programme.
