Under the Catfish parent, Pangasius labels the Southeast Asian river catfish (often Pangasianodon hypophthalmus) sold as mild white fillets in global trade—sometimes controversially marketed near “catfish” in Western shops. Flesh is lean, soft-flaked, and very mild, ideal for gentle baking and saucing. Do not confuse with US channel catfish: texture is softer and flavour blander. Use for weeknight fillets, light curries, and battered portions. Check labelling laws in your market; quality varies by farm and processing. Avoid mushy, heavily soaked blocks.
