African catfish usually means Clarias gariepinus (and related Clarias), air-breathing farmed catfish raised widely in Africa, Asia, and Europe for robust growth and mild flesh. The meat is white to off-white, moist, and takes curry spices, tomatoes, and frying well. Fillets and whole small fish are common. Skin can be tough—score or remove. Flavour is milder than wild river catfish of other genera when farmed on clean feed. It is a staple aquaculture species, not a substitute name for American channel catfish.
