Vegetable
Sweet Cassava
S tier
Sweet cassava landraces have lower cyanogenic potential and are preferred for home boiling, frying, and fresh market yuca—still always cooked, but with simpler detox than bitter types. Flavour is gently nutty and clean when boiled soft. Roots are the ones sold whole in Latin and Caribbean produce sections for home kitchens. Peel thick bark-like skin, remove fibrous core if needed, boil until tender or cut for fries. Classic with garlic mojo, coconut milk stews, or as a potato substitute. Do not treat “sweet” as permission to eat raw.
