White Cardamom

White cardamom is green Elettaria pods bleached with sulphur or other agents for a pale ivory look once preferred in some Middle Eastern markets for light-coloured rice and coffee presentation. Bleaching mutes chlorophyll colour and can thin top-note aromatics, leaving a milder, sometimes flatter spice than unbleached green. It is a processed appearance grade, not a separate species. Prefer true green pods when flavour is paramount. If using white, compensate with slightly more volume and fresher stock. Do not confuse with naturally pale immature pods or with white-seeded novelties.
