Large cardamom is the size-based trade name for big Amomum pods as opposed to small green Elettaria—essentially black cardamom in commodity English, used in customs and wholesale lists. Pods dwarf green cardamom several times over, with thick husks and a smoky-camphor payload aimed at savoury pots. The name helps buyers avoid accidentally stocking dessert cardamom for curry factories. Specify smoked Himalayan large cardamom when ordering; “large” alone should not be confused with oversized green pods. Crack to check seed moisture and aroma before bulk use.
