Green cardamom is the culinary trade name for fresh-coloured Elettaria pods—bright to olive green when well dried—sold whole for maximum aroma retention. The flavour is simultaneously sweet, camphor-cool, and lemony, versatile in both biryani and cinnamon buns. Green distinguishes it from brown-black Amomum pods and from white bleached pods of the same species. Buy plump pods that release scent when pressed; hollow rattling old pods are spent. Lightly toast to wake oils before grinding. In spice blends, green cardamom lifts without the campfire note of black cardamom.
