Amomum subulatum is black cardamom—the large, ridged, smoky-brown pod of the eastern Himalayas, dried over open fire so campfire phenolics fuse with camphoraceous seed oils. It is a different genus from green Elettaria: bigger pods, tougher husks, and a savoury profile built for garam masala, phaal-style richness, and brothy dals rather than sweet buns. Seeds are sticky and dark within the charred-looking capsule. Bruise one pod into rice or braises; remove before serving if husk is harsh. Never swap 1:1 for green cardamom in desserts. True black cardamom should smell smoked and cooling, not merely old and dusty.
