Galia is a netted melon with green, lime-honey flesh and a tropical perfume developed in Israel and now grown worldwide. Rind yellows as it ripens under full netting; flesh stays pale green rather than orange. Flavour is distinct from American orange cantaloupe—more floral and less “musk melon” cliché. Excellent chilled cubes, breakfast fruit, and pairings with mint or ginger. Buy when the rind is golden-yellow and fragrant; green hard Galias disappoint. Popular in European and Middle Eastern retail as much as specialty US bins.
