Turbinado sugar is partially refined cane sugar spun in a turbine centrifuge to strip surface molasses while leaving blond crystals with a mild cane aroma—hence the name. It sits between raw and white: cleaner than muscovado, more character than granulated. US “Sugar in the Raw” style packets made turbinado a coffee-shop classic. Stir into oatmeal, sprinkle on crème brûlée before torching for a quick crust, or use in spice rubs. Crystal size is large; for fine baking, grind or accept speckled batter. Flavour is honeyed-cane rather than deep treacle.
