Muscovado is an unrefined or minimally refined cane sugar that keeps nearly all its molasses in sticky, fine-to-medium dark (or lighter) crystals—intensely fudgy, mineral, and almost savoury-sweet. Traditional production in Mauritius, the Philippines, and elsewhere gives a complexity that factory light/dark brown sugars only approximate by re-blending molasses. Dark muscovado stains fingers and batters; light muscovado is still more characterful than standard light brown. Use in Christmas cakes, rum desserts, and chilli-chocolate where treacle depth is wanted. It will not cream like white sugar; melt into wet mixes. Clumping is normal—press through a sieve if needed.
