Green cabbage is the everyday smooth-leaf, pale-to-medium green round head of coleslaw, corned beef platters, and stir-fried strips—juicy, mildly sweet, and sturdy enough for long braises. Outer leaves are darker; hearts are denser and sweeter. It is the commodity default when a recipe says only “cabbage.” Shred for slaw with acid and fat; braise with butter; ferment. Avoid overcooking into sulphurous mush—brief heat keeps sweetness. Core before fine shredding.
