Chestnut mushrooms are brown-capped A. bisporus marketed in the UK/EU—firmer and more flavourful than white buttons at similar size. Colour is light brown; gills darken with age. Excellent all-purpose browner for stews and breakfast grills. Prefer over white when deeper mushroom taste is wanted without portobello size.
