Cucurbita moschata is the species behind butternut, many cheesesquashes, and tropical pumpkins—tan skin, moist sweet orange flesh, and better humidity tolerance than C. maxima. Butternut’s bell shape and small seed cavity are selected forms of this species. Flavour is chestnut-sweet with less string than some field pumpkins. Roast, soup, purée, or cube for curries.
