Flavour is more assertive than wheat: mineral, nutty, faintly bitter in a pleasant way when fresh. Buy fresh flour; buckwheat oils stale. Roasted groats (kasha) differ from raw. Blend with wheat for easier soba handling unless 100% buckwheat is required.
