Rubine is a heirloom-leaning red Brussels sprout with violet buttons and a reputation for smaller, more open buds than modern green hybrids—but excellent colour and sweet-earthy flavour after frost. Yield and uniformity lag commercial greens; gardeners grow it for beauty and taste. Leaves on the stalk may also purple. Best roasted or sautéed small; boiling washes colour and can emphasise bitterness if overdone. Harvest selectively. A colour heirloom for patient growers.
