Salmo trutta is brown trout—the ancestral European trout with nutty, pink-to-cream flesh and more character than many rainbow trout. River fish taste of clean water and insects; lake forms run larger and richer. It is the same species as sea trout in its anadromous form, but this entry is the freshwater identity. Pan-fry, bake in foil with herbs, or hot-smoke. Wild brown trout is often catch-and-release; farmed brown trout supplies restaurants. Do not overcook the lean-moderate fat flesh.
