River Brown Trout
A tier
River brown trout are wild or restocked Salmo trutta from flowing water—usually smaller, firmer, and more delicately flavoured than lake fish. The flesh is pale pink to beige with a sweet, clean finish when the river is pure. Classic meunière, almond brown butter, or simple grilling on the bank. Respect size limits and seasons. These are special-occasion wild fish more than bulk fillets; farmed “brown trout” is the everyday substitute.
