Lake Brown Trout

Lake brown trout are lacustrine Salmo trutta that grow larger and often richer than river fish, with deeper colour when diet includes crustaceans. Flesh is excellent roasted as steaks or thick fillets, closer to a mild salmonid luxury than a tiny panfish. Smoke large fish, roast with bacon or herbs, or cure. Some alpine and northern lakes produce legendary table trout. Texture is softer on very large old fish—prefer mid-size for best eating.
