Turnip greens are the leafy tops of turnip-type Brassica rapa—closely related to broccoli rabe but usually grown for leaves rather than flowering shoots, with a similar mustard bitterness and softer texture when young. Southern US soul food and Portuguese cozidos both claim them. Overmature leaves grow coarse and sharp. Long-simmer with smoked meat in the Southern style, or sauté briefly like rapini. Overlap with broccoli rabe in bitter-green cooking is real; flowering buds distinguish classic rapini bunches. Use when leafy bulk matters more than tight florets.
