Broccoletti is an Italian diminutive used for tender young broccoli rabe shoots—smaller stems, higher leaf-to-stem ratio, and often a slightly milder bitterness when cut early. Markets may use the name interchangeably with rapini, but true young broccoletti cook faster and plate more delicately. Quick sauté with anchovy and chili, or fold into frittatas. Ideal when you want rapini character without thick woody ends. Do not confuse with mild broccolini (a different Brassica cross).
