Vicia faba is the broad/fava bean—large flat seeds in padded pods, eaten fresh green or dried, with a green, slightly bitter, buttery flavour distinct from common beans. Skins on mature seeds are often slipped after blanching. A Mediterranean and Middle Eastern staple with spring ritual status in many cultures. Pod young for whole small beans; shell and double-peel larger favas; dry for ful medames. Never undercook dry favas. Favism risk means some people must avoid fava.
