Small-seeded favas include types used for whole cooking and some dry traditional dishes—less need for double peeling when truly small and young. Flavour is concentrated green-beany. Distinct from jumbo processing favas. Excellent in whole-bean sautés and stews. Dry small favas appear in some Mediterranean recipes. Choose class intentionally versus large Windsor types.
