Abramis brama is the common freshwater bream of European lakes and slow rivers—deep-bodied, bony, with soft mild flesh that shines when smoked or minced rather than as boneless steak. Flavour is gentle and sweet from clean water; muddy when not. Smoke whole, pot in aspic traditions, or carefully fillet for pan-frying after pin-bone work. Central and Eastern European fish cookery knows it well; Western fine dining often ignores it unfairly.
